Blue Dr. Karen Chapman-Novakofski is a Professor in the Department of Food Science and Human Nutrition, an Extension Specialist in Nutrition, and a Registered Dietitian Nutritionist. Jade graduated from the University of Illinois with a B.S in Dietitics. She is currently pursuing an M.S in Nutritional Sciences with a focus on dietary quality. After graduation, Jade plans to earn her R.D credential and begin to address childhood obesity. Emily is currently a senior at the University of Illinois studying Dietetics with hopes to earn her M.S. degree and complete her Dietetic Internship in the next upcoming years. Her lifelong goal is to become a Registered Dietitian with her own private practice counseling individuals on health and nutrition. Flora is currently a graduate student at the University of Illinois, building upon her B.S. in Dietetics with an M.S. in Human Nutrition. Her research focuses on the role of vegetables and culinary seasonings in the management of type 2 diabetes. Her career goal after graduation is to become a Registered Dietitian in a clinical setting. She aims to work with individuals with prediabetes and diabetes as a nutrition educator and counselor. The Nutrition and Wellness Team within Illinois Extension continues to translate science and engage our communities.
