    • 2 cups lentils
    • 3 tablespoons olive oil
    • 2 medium onions, chopped
    • 1 medium green pepper, chopped
    • 1 tablespoon flour
    • 8 ounces chorizo, chopped
    • 6 medium tomatoes, chopped
    • 2 medium carrots, chopped
    • 2 cloves garlic, chopped
    • 6 cups water
    • salt and pepper -- to taste

    • Saute onions and peppers in olive oil until tender.
    • Add flour, cook 1 minute.
    • Add all other ingredients
    • Simmer 1¾ hours.
